The three days of the Bonifanti

Three intense days

In Bonifanti There is only one interest: to make a quality product. And to do that it really takes three days.

These panettone take us three days to get on a truck and come to us or from other customers who buy Bonifanti.

We wait 10 hours in the first leavening. After the second dough we wait another eight hours in the second one.
And after cooking we wait another day, a whole night, because the product must be cooled to room temperature for a long period. That because the natural and very delicate interior aromas created by the ingredients of the panettone can be gradually absorbed by the dough.
